Palm nut Soup also known as Ofe Akwu is a delicious African delicacy Made from the creamy extract got from pulverized Palm nut fruits ( locally known as Akwu ). It is a nice delicacy desired by everyone. In this post we present the recipe for preparing this sumptuous meal.
How to Prepare Ofe Akwu (Banga Soup)
Ingredients
- 1kg palm fruit
- Beef
- Dry fish & stockfish
- Scent leave (Vegetable)
- 2 medium size onions
- 2 tablespoonful of ground crayfish
- Salt and pepper (to taste)
- Ogiri okpei
- 4 big stock cubes
Equipment
- Mixing Bowl
- Mortar and pestle
- Sieve
Instructions
- Wash and cook the palm fruits. When they soften, empty the palm fruits in the mortar and pound. After, sieve the extract and keep aside.
- Cook the beef and dry fish with 1 bulb of diced onion and the stock cube till it’s done.
- Wash the scent leaves properly and slice into tiny pieces.
- Set the pot of palm fruits extract on a cooker, cook at high heat till it produces red oil.
- Slice and put the remaining onion bulb into the mortar, with the pepper, ogiri okpei and crayfish and then pound.
- Now add the cooked beef and fish into the cooking pot, followed by onions, pepper and crayfish and leave to simmer.
